Things that make me feel old:
- I didn’t know what twerking was until Miley Cyrus did it.
- Speaking of Miley, even before the whole VMA-twerking-fiasco, I thought We Can’t Stop was the worst song I had ever heard.
- I don’t know what Candy Crush is and don’t understand why facebook keeps asking me to play.
- I had general admission standing room tickets to a concert, and although I had a great view of the stage, I would have killed for an actual seat. [Don’t hate me for wanting to sit on the slow songs.]
- My perfect Friday night now involves sushi, a couple craft beers… and my couch.
- Sunday Funday means there is an SVU marathon on TV.
- Every time I see a 21 year old girl running around my neighborhood in a belly shirt I want to kindly remind her to always leave them wanting more. [life motto]
Some clues that I’m not as old as I thought I was:
- I went to a party labor day weekend and (somewhat) willingly drank Natty Light from a keg.
- In the middle of the aforementioned VMA disaster, I did in fact, YouTube “how to twerk” just because I was curious. There was a great video tutorial, but as it turns out, my body don’t move like that. [probably not a bad thing]
- I unashamedly wore gold glitter eyeliner to work on multiple occasions this summer.
- My hot pink flats have made more than one appearance in the office in recent months.
- I survived (barely) a bachelorette party in Atlantic City.
- I think Catsfish is the greatest show on TV right now.
- Sometimes I eat s’more for breakfast. In pancake form of course.
The Goods:
INGREDIENTS:
- 1 cup flour
- 1 cup graham cracker crumbs
- 2 Tbs sugar
- 4 tsp baking powder
- 2 eggs
- 2 Tbs oil
- 1 cup milk
- 1 cup mini marshmallow
- 2/3 cup milk chocolate chips
Optional:
- chocolate syrup
- whipped cream
The Deets:
Recipe makes 8 small pancakes, or 4 large restaurant style ones.
In a large bowl, whisk together the flour, graham cracker crumbs, sugar, and baking powder. In a separate bowl, whisk together the eggs, oil and milk. Pour the liquid ingredients into the dry ones and mix with a wooden spoon just until all of the dry ingredients have been incorporated. Fold in the chocolate chips and marshmallows.
Heat a nonstick pan over medium heat and spray with nonstick cooking spray. Ladle a quarter cup of batter for a small cake or a 1/2 cup of batter for a large cake onto the hot surface. Cook pancake for about 2 minutes on each side, flipping when it is golden brown.
Top pancakes with butter, syrup, or my personal favorite: chocolate syrup or whipped cream.
The Inspiration:
An original reciepe… inspired by my favorite summer treat!
