I’m just going to make this part short and sweet. It’s January 3rd and everyone feels like they are going to explode. 99% of us agree that we ate too much over the holidays and even if we didn’t gain a single pound, we all feel like we gained 15. So now it’s healthy food time again. Seriously, my entire Pinterest page is low cal recipes and workout videos. We are all definitely on the same page here.
Since we’re craving good-for-you meals again, I decided to whip up my own healthy lunch that actaully tastes like something! No bland salads and flavorless substitutes up here in Spatularette world!
I like this Buffalo Chicken Salad because you can make a batch at the beginning of the week and eat it for lunch every day. It is quick, easy, and packed with flavor and texture so you’d never know it’s low-cal.
- 1 1/2 cups of cooked chicken, chopped
- 1 6oz cup of plain fat free Greek yogurt
- 2 Tbs hot of your favorite hot sauce
- 1/2 cup celery, finely chopped
- 1/2 cup crumbled blue cheese (optional)
- wraps, bread, rolls, lettuce, or greens for serving
We’re going to start with the chicken. You can buy it pre-cooked at the grocery store, chop up some left overs or make your own. I opted to roast a couple of bone-in/skin-on breasts at 400 degrees for about a half an hour. Once they cooled I removed the skin and the bone before chopping them for the salad. Once the chicken is chopped set it aside.
In a large bowl, whisk together the Greek yogurt and the hot sauce until smooth. Add the chopped celery, chicken, and blue cheese crumbles if desired and gently toss to combine. Serve on a low cal wrap, roll, or on a bed of lettuce.
