Power Foods Friday – Breakfast Salad

The Scoop:

There are so many things in life that are just meant to be a pair.  They are fine on their own, but way better together.  Peanut butter and jelly.  Chocolate and mint.  Cheese and French fries.  Will and Kate.   Or me and Small One!  Seriously, the first week we met, we just knew we  were going to be best friends!

Then there are the not-so-likely-but-just-as-awesome pairs.  Peanut butter and pickles.  Chocolate and cayenne pepper.  Milkshakes and French Fries.   Kim and Kanye… oh gosh.  What is my life coming to?  I just made a Kardashian reference.

Another not-so-likely pair?  This breakfast salad!

I love eating salads, but find that they don’t always leave me feeling satisfied.  I need a little somethin somethin to fill me up, and a simple plate of vegetables doesn’t necessarily do that for me.  Breakfast salad happens to be the best of both worlds.  Healthy veggies.  No heavy dressing.  And the perfect punch of protein and flavor from bacon and eggs!  Breakfast salad might sound a little strange, but I’m positive you will love it!

The Goods:



  • 2 cups arugula
  • 1/2 cup chopped vegetables
  • 3 slices pancetta (or a couple trips of turkey bacon)
  • 1 egg


  • 2 Tbs fresh lemon juice
  • 1/4 tsp (little squirt) of siracha, more to taste
  • pinch of kosher salt

The Deets:

In a salad sized bowl, mix together the dressing ingredients.  Add the arugula to the bowl and toss to evenly coat in the dressing.  Top the arugula with a half cup of chopped vegetables.  I used mushrooms, tomatoes, and red onion.

In a nonstick pan over medium heat, fry the 3 slices of pancetta or bacon.  I had planned on using turkey bacon to cut the fat, but my corner market didn’t have any in stock, so I swapped the pancetta.  When the bacon is crispy, crumble it over the salad.  Finally, in the same pan, cook an over easy egg and place it on top of the salad.  When ready to eat, break the yoke and let it run down over the salad to mix with the dressing.

A salad on the menu of Agiato, a cute little European inspired cafe in Manayunk.

It’s Breakfast Salad.  So it’s kinda healthy, kinda not.  But 100% a power food!
